Cake Mix
- Chocolate Cake
- 1 cups all-purpose flour ((130g))
- 1 cups sugar ((207g))
- 1/3 cup unsweetened cocoa powder ((43g))
- 1 tsp baking soda
- 1/2 tsp salt
- 1 large eggs
- 1/2 cup buttermilk ((220ml))
- 1/2 cup vegetable oil ((220ml))
- 1 tsp vanilla extract
- 1/2 cup hot water ((220ml))
Buttercream Frosting
- 1 1/4 cups unsalted butter (room temperature)
- 4 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- 2 tbsp water
- pinch salt
Cupcakes
Prepare a cupcake pan with 12 cupcake liners
Preheat oven to 300°F
Add all dry ingredients to a large bowl and whisk together.
Add eggs, buttermilk and vegetable oil to the dry ingredients and mix well.
Add vanilla to hot water and add to mixture. Mix well.
Divide batter evenly between the 12 cupcake liners & bake for 18 minutes until a toothpick comes out with a few crumbs.
Remove the cupcakes from the oven and let them rest for 1 hour to cool completely
Make the Frosting
Make frosting while cupcakes cool. Beat the butter in a large mixing bowl until smooth.
Slowly add 2 cups of powdered sugar and mix until smooth.
Add vanilla and half of the water and mix until smooth.
Add another 2 cups of powdered sugar and mix until smooth.
Add cocoa and mix until smooth.
Add remaining water until the frosting is the right consistency.
