Chocolate Cupcakes

Ingredients
 

Cake Mix

  • Chocolate Cake
  • 1 cups all-purpose flour ((130g))
  • 1 cups sugar ((207g))
  • 1/3 cup unsweetened cocoa powder ((43g))
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large eggs
  • 1/2 cup buttermilk ((220ml))
  • 1/2 cup vegetable oil ((220ml))
  • 1 tsp vanilla extract
  • 1/2 cup hot water ((220ml))

Buttercream Frosting

  • 1 1/4 cups unsalted butter (room temperature)
  • 4 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 2 tbsp water
  • pinch salt

Instructions
 

Cupcakes

  • Prepare a cupcake pan with 12 cupcake liners
  • Preheat oven to 300°F
  • Add all dry ingredients to a large bowl and whisk together.
  • Add eggs, buttermilk and vegetable oil to the dry ingredients and mix well.
  • Add vanilla to hot water and add to mixture. Mix well.
  • Divide batter evenly between the 12 cupcake liners & bake for 18 minutes until a toothpick comes out with a few crumbs.
  • Remove the cupcakes from the oven and let them rest for 1 hour to cool completely

Make the Frosting

  • Make frosting while cupcakes cool. Beat the butter in a large mixing bowl until smooth.
  • Slowly add 2 cups of powdered sugar and mix until smooth.
  • Add vanilla and half of the water and mix until smooth.
  • Add another 2 cups of powdered sugar and mix until smooth.
  • Add cocoa and mix until smooth.
  • Add remaining water until the frosting is the right consistency.
