Orzo Pasta with Feta & Tomatoes

Rich yet fresh, orzo pasta tossed in a buttery feta sauce creates a creamy, tangy base that coats every bite. Juicy tomatoes and fresh parsley add brightness and balance, keeping the dish light and flavorful. It’s an easy, elegant side that pairs perfectly with just about any meal.

Ingredients
 

  • 1/2 pound orzo
  • 1 tbsp Salt
  • 2 tbsp butter
  • 1 cup feta cheese crumbles (or cotija cheese)
  • A handful of parsley leaves (chopped)
  • 1/2 pint grape tomatoes (halves)
  • Freshly ground black pepper

Instructions
 

  • Heat water in large sauce pot to boil and add pasta.
  • Melt butter in the pot while still hot and combine with feta. Add cooked pasta to feta butter and toss with parsley and tomatoes, season with a little pepper.
